I am wondering how to log out of the now tv app as I’ve bought a pass but in a different email address, or is it unique to the Apple ID address?

There should be an option within the Now Tv app under Settings to sign out of the current account and sing in with a different one.
Do note, if you just had the gift card emailed to a your address, its probably not tied to that, and you should be able to redeem it onto your current Now TV account: link-> https://help.nowtv.com/article/how-to-apply-or-enter-voucher-code

If you made an in-app purchase on an Apple device, then it is tied to the Apple ID account that was used to make the purchase.
If you made the purchase on a Now account (e.g. on the web), then that is not tied to your Apple ID account.
