can I use my old mac with Core i5 as an extended monitor for my new mac with the apple M1 chip?

iMac 24″, macOS 12.4

No, because new Mac's can not use an iMac as a display in Target Display Mode.

Also before Target Display Mode was deprecated, it never supported extended desktop, only mirroring.

You can with 3rd party software. But as den.thed said Target Display mode is gone.
