What information is being shared and with whom?
Are you taking advantage of the privacy & security features on the iPhone?
Purchased apps that are not on your device can be found by going to App Store app>tap your photo>tap purchases>tap not on this phone and you should see every app that was ever downloaded to your device.
Never let anyone touch your unlocked device.
