Whenever I scan Polaroid photos in the notes app every since the new iOS update, my photos underexposed looking black in certain areas or overexposed, as well as giving a blue ish tint filter and the quality is more different than the photo/ before the update, how can I fix or improve it ?

Here are some ways you can improve the scan quality on your device:
No problem!
Restarting is simply fully turning off your device then turning it back on, unlike a reset which affects your data.
Restarting will not affect your iCloud or data.
Personally I recommend restarting devices like iPhone’s and iPad’s once every 1-2 weeks to keep it running smoothly.
