How do I turn off tags in Apple Notes?

The thing I use Apple Notes for, more than anything else, is to write down chord charts for songs or other musical ideas. Unfortunately, the recent update that turns anything after the # symbol into a link to a tag has rendered the Notes app essentially useless for me, since I can no longer write down chords like C#m without it becoming a formatting nightmare.

Is there any way to turn this feature off? Or at least select the tag and turn it into plain text after the fact? It’s a really frustrating feature and I don’t know what to do.

Thank you!

Have you looked at Settings > Notes and tried turning off the switch for Auto Convert to Tag?
