Apple Watch 7, After last update keeps disconnecting 100 times a day

My last update to Apple Watch iOS 8.7 (19u66)

and I have apple care plus called your support and told me to take it in for service but I’m traveling in Asia and was told my apple care will not work here….

how can I go back to my old iOS??
