I signed up to HBO Max through an apple device and now I need to change the payment method since I swapped devices and no longer have access to an iPhone. Whenever I try to change my payment method it redirects me to itunes and the best I can do is cancel the subscription from there. How do I make the payments through a credit card directly and not through apple?

You should be able to update your payment information for your Apple ID in iTunes.
Change, add, or remove Apple ID payment methods - Apple Support
If you signed up through Apple then changing your Apple ID payment information is the only way to change the payment method. If you wanted to change it with HBO directly, you'd need to cancel your subscription (through Apple subscriptions) and then sign up with HBO directly.
