I cannot point the MX record for my entire Domain to iCloud mail, as o only 1 User will be going to iCloud mail, other users will remain at my Domain mail server. How can I FORWARD my Username@MyDomain to iCloud mail from my mail server?
That's not how Custom Email Domain on iCloud works. If you relocate your custom domain to iCloud mail, all mail for every recipient will be redirected to iCloud.
If you only want to send email from one custom address to iCloud, use your CPanel or host settings to forward mail for just the one address to your iCloud address. Don't set up a custom domain on iCloud.

Yes, my custom email address is already within my existing mail client. My goal was to migrate my mail and saved folders to iCloud as my backed-up cloud repository for all folders, contacts, calendar, music etc.
The only folder left not in iCloud is my custom email address Inbox.
Thank you. In doing that, I just want my outgoing mail to be from my custom email address. Can that be added to the iCloud SMTP server list?
Why don’t you set up that custom email address within you existing mail client?
If you're using Outlook you might (and I haven't tried this, so I can't be sure) be able to have iCloud back up the .pst folder for your custom domain email address.
