I have been paying for my wife and myself 50 gb of iCloud storage and just purchased a 200gb family plan. How can I assure that the two 50gb storage plans will stop and the 200gb plan will be the Olly payment that I make?

How do I assure that the two 50gb payments stop and the 200gb family sharing plan takes over?

Share the plan with your wife by using the instructions in the "Share iCloud+ with everyone in your family" section of Share iCloud+ with your family - Apple Support

She will need to switch plans as described in the "Switch from your iCloud+ plan to your family plan" section of that support article.

Also see the following from that section:

If a family member is already paying for their own iCloud+ plan, they can choose to switch to your plan or keep their own and still remain part of the family. When they switch to the shared family plan, they get a refund for the remainder of their personal plan. They can't keep their current plan and use the shared family plan at the same time.
