transfer of data old iPhone to new iPhone

old iPhone6 is water damaged

how to transfer data from laptop iTunes backup of the old iPhone6, to new iphone6 when message comes up "backup was not compatible with iPhone being restored'. ?

Notes:

I've turned off 'find my phone' via iCloud.

The new phone has current version iOs updates

also can I save the data on the new phone6? - eg I've taken photos over the last few days whilst waiting for repair outcome for old one [its dead]

Bearing in mind that an iPhone 6 cannot support iOS versions beyond 12.5.5, if you used (to no avail) the steps provided in this support article to restore data:--> Restore your iPhone, iPad, or iPod touch from a backup, I suggest that you contact Apple suppoprt directly, using this link:--> Get Support

Quick Transfer using Bluetooth (Does not require Internet) --> Use QuickStart to transfer data to a new iPhone, iPad or iPod ...
Restore from iCloud Backup (Does not require Internet) -> Restore or set up your device from an iCloud backup - Apple ...
Restore from iTunes backup (Does not require Internet) --> Restore your iPhone, iPad, or iPod touch in iTunes on PC ...
