font size changes when sending from Mac OS to iPhone recipient

You have no control over how another user renders the font size... this would depend on local preferences whether it is "iPhone" or Android...(?) or the mail client being used... is beyond your control.

If you are copying and pasting text it is possible you are including some pre-formatted font size—try clearing the entire message in plain text or some such to strip out formatting if you are concerned with this detail.

I do not think font size determines "professionalism."

You mean you can see the different font sizes at your end already before it gets sent?

Does this same thing happen if you remove your signature stuff from the message?

Does it help before sending to select your text and make sure the font is set to a particular size for the whole thing?

What mail system are you using? MS Exchange by chance?

I was referring to the email account service provider, like Apple, gmail, microsoft, whatever. But it looks like you have determined that the sig may be causing the problem?

You have to make sure to use the same font throughout the message.
