Using apple mail, I write an email. Then I use edit to "select all" and "copy." Then I compose a new email and used edit to "paste" the original email into the new one. Then I send both, to different people. But when they receive them, the fonts are different on the two emails. How do I ensure that they are the same?

You can try to make sure that the font indicated in the new message pane is the same for each individual email. But in the end, the person at the other end can in some cases determine what font gets used for the emails they receive.
You really can't guarantee equal display. Each email browser will interpret the styles differently. You can attach a pdf and send that if formatting is your goal.
As muguy says, the Font displayed is up to the receiving end.
