Apple TV (4th generation or later) (A1625, A1842, A2169) supports 7.1 channels. The output will be uncompressed PCM Multichannel. 7.1 channel support is available when the content has 7.1 channel audio in the source. That may not be the case with e.g. some of the newer Dolby Atmos releases; those often have 5.1 and 2.0 as fallback options, but not 7.1.
