My email system all of a sudden shows an item 'FOLDERS' instead of my email folder hierarchy....what the heck is happening, and how can I get back to my folder system??

you are going to have to paint a big picture of your issue...
Quit Mail.app and relaunch holding the Shift key and compare your results.

How can I expand 'FOLDERS' that showed up after restart instead of what I had all the time which is a folder system???
