How to hide "from" field in Mac Mail?

I recently upgraded to Monterey and now trying to set everything up.


Every time I compose a new email, I'm seeing a "from" field with my email address in it. This is annoying and simply visual clutter - I don't see the point of showing myself what my own email address is!


I seem to be able to customise most things in Mac Mail but not this. How can I remove the "from" field?


Any help would be much appreciated, thank you.

It is there so people with more than one email account can see if they are sending from the desired account.
