You can't.

There was never any option to roll back an iOS.

⚠️ The 15.6.1 update fixes a major security breach Apple had last week , I would hang on to it .

Try : settings > box above your name > search " sound " and " volume " … something else may have caused your sound issues . Additionally , check the settings for your speakers if you have

them . In settings , there are preferences for sounds above General . I have an iPhone 7 and there are volume buttons on the left side of the phone , opposite the power button .

Does your iPhone 8 still have its original battery?

And what's the Maximum Capacity % here?...

madani ~ 86% max capacity is ok. Apple's iPhone User Guide says: "If your iPhone isn’t working as expected, you can try restarting it by turning it off, then turning it back on. If turning it off and on doesn’t fix the issue, try forcing it to restart.":
