If you are talking about Apple Music subscription files that you have downloaded for offline listening, they are DRM-protected and cannot be used outside the Apple ecosystem. For Serato, you will have to use non-protected files of the kind you can purchase from the iTunes Store, Beatport, Bandcamp, etc.

Did you get the tracks by the procedure in this guide under the section "Download music that you've added to your music library"? Add and download music from Apple Music - Apple Support
If so, the tracks are DRM-protected and cannot be used in non-Apple players.
What is the source of the tracks that are causing an issue?

Are you using the normal procedure to add your files to the Serato library, as described in here? https://support.serato.com/hc/en-us/articles/223446528-Adding-files-to-the-Serato-DJ-Pro-Library
As long as the files are non-protected, this should work as described. The Serato procedure does not in any way depend on iTunes/Music, although the same files may be used in both.

An AM playlist can have both protected and unprotected files in it.
