I am trying to download an app on my iPad but it is asking me for a password to an iTunes account that doesn't exist any more. How do I change the iTunes account to match the account I have used to log onto the iPad?

It depends on what you did with that 'iTunes account'. If you have deleted it, it is no longer valid, it simply no longer exists and it no longer works.
