I would have done it via Migration Assistant as linked, but yo can take the opportunity to pare down to what is necessary on the new Mac by installing from source.
If the old Mac had a lot of 32-bit apps, I wouldn’t Migrate the apps—I’d just install what I wanted to use on the new Mac.
