Unpaired Apple Watch not updating with new phone, won’t pair

My Apple Watch hasn’t been used in over a year. I had misplaced it. Trying to pair it with my new phone. It will not get past the software update request. Every time I receive an error, “Unable to check for Update.” Tried soft reset on both devices. How do I get the watch paired? Been trying different things for hours.
