When I travel overseas with my iPhone 13 Pro, I often buy a local SIM card as it is usually much less expensive than my US carrier’s “International “ plan. Will I still be able to do this with an IPhone 14 Pro and it’s eSIM?

That is a real bummer. I often just buy a local SIM card at a newsstand, swap it with my US SIM, and go on my way. No time to research eSIMS. Very disappointed to lose this ability with the iPhone 14 Pro, which I was about to buy.
Yes, they do but it's expensive. $10/day flat rate. If you're gone for 2 months, that $600. Local SIMS are a lot cheaper. Buy one for $15 or so and then just top it up as you need more voice or data.

Who is your carrier? AT&T apparently caps it at $100/month. It's worth talking to your carrier.
I have Verizon. I'll check out AT&T. Also maybe eSIMS are now more common overseas than I have been aware as I've never looked for them. Maybe (hopefully) this is a non-problem. Thanks to all for your advice!
Check with your carrier, they may offer an international roaming eSIM.
I have Verizon but the only international travel I've done lately has been to Canada, which for purposes of my plan, doesn't count as roaming.
