I was using Foxit Reader as my default PDF app, so all my PDF files showed the Foxit icon as the document icon:
I uninstalled Foxit & replaced it with Adobe Acrobat, but my PDF files still show the Foxit icon instead of the Adobe icon, even after clicking the
button.
Any thoughts on how to "set" the Adobe icon as the default?

Are trying to change the icons in the Finder or the small icon at the top left of the Get Info window? If the latter Foxit Reader may have injected itself into the PDFs. I never used it so I wouldn't know.
You can try rebuilding Launch Services. See this article: https://eshop.macsales.com/blog/47149-quick-tip-managing-macos-file-associations
Select a PDF, press "command+I" (Get Info), change "Open with:" to Adobe Acrobat, click the "Change all…" button.
