To get started, while you would be unable to mirror your iPhone with the Apple Watch Ultra as described in this link here, Use AirPlay to stream video or mirror the screen of your iPhone, iPad, or iPod touch - Apple Support there are certain settings you can enable that will allow your Apple Watch to mirror the settings on your iPhone as well.
