Transferring apps to a new iOS device with Quick Start

I'm replacing my iPhone 7 with a new iPhone 14 in the near future, and am concerned about transferring a few apps that I still use but which are no longer available from the App Store. I understand that app binaries are not included in backups, and when setting up a new phone from backups, apps will have to be downloaded from the App Store. So if I take this route, I'm probably going to lose access to older apps. My question: If I setup the new phone with Quick Start, will all apps be transferred from the old phone, including those that are no longer available from the App Store?

Thanks in advance for any insights!

Answering my own question: All apps seem to be transferred to a new phone with Quick Start, even those no longer available from the App Store. I was pleasantly surprised to make this discovery after setting up a new phone over the weekend. I suppose it's possible that old apps are downloaded from some archival section of the App Store, although it seems more likely that the bits are copied directly from the old phone to the new phone.
