Pickup time
I bought a new phone, but i made a mistake regarding the pickup date. Does someone know how can i change the pickup date, or will they keep the phone for me.

Just contact the store where you are picking it up from. If it's an Apple Store, they should keep it for a bit - but not indefinitely. At some point (5-7? days) they'll return it to stock unless you contact them. That info should be in your pickup notification email.
