I'm receiving calls from unknown numbers, but texts from unknown numbers are not coming through at all. If the number isn't in my contacts, I can't receive a text.....

Try this: Go to Settings>Messages, scroll down to "Message Filtering" where you'll see "Unknown & Spam". Tap that and turn off "Filter Unknown Senders." Now you should be able to receive texts from people not in your contact list.
