Updating an iPhone Through Cellular:

Updating your iPhone using Cellular is not an option for your model (XS Max). The model simply does not have the builtin hardware for this. See my User Tip: Use an iPhone 12 or later, that is using 5G, in order to update over Cellular - User Tip

You can use cellular data......IF......you have a 5G connection active on your phone.

That would mean that you have an iPhone 12, iPhone 13 or have ordered an iPhone 14......AND.....your carrier is actually providing a 5G signal.
