See Use AirPlay to stream audio - Apple Support. When playing from iTunes or Music you should be able to select multiple AirPlay targets.

I have the most recent. I see what you are talking about. AIRPLAY from the app. I was wondering about websites to airplay via the "drop down". See image.

Yes, for website audio, or indeed most apps, you're going to be limited to a single speaker from the control center. Music should give you more flexibility.
