How did you delete your Apple ID exactly? It is very important that you clarify what you did exactly.
Unless you requested deletion directly from Apple through their "Delete Apple ID support mechanism", the Apple ID is not actually deleted.
If you simply cancelled the associated email address, then the Apple ID is still exists and should be accessible if you know the password.

If you did request it be deleted as explained in: Delete Apple ID support mechanism, and the process has been completed then it cannot be undeleted and the iPad is now unusable:

While your request is being processed, you can contact Apple Support with the unique alphanumeric access code you received, and we’ll help you cancel your request. After your account is deleted, Apple can't cancel the request, reopen your account, or restore your data.
- After your account is deleted, you can't sign out of iCloud or turn off Find My iPhone Activation Lock on your devices. If you forget to sign out, you might not be able to use your device when your account is deleted.
