I installed IOS 15.7 on my iPhone 11, and and I wanted the IOS 16 but there is no option for my iPhone and was wondering how I upgrade because there is no option available. It just says IOS is up tp date with 15.7

You might have used an iOS beta version on your device. Should be this case, go to Settings>General>VPN & Profile management, delete the beta profile, restart your iPhone, check for updates availability again.

No, but it's recommended that you create a full backup of your device before any modifications and/or updates.
