My carrier is T-Mobile. This morning, I spent more the 3 hours on the telephone with the carrier, then with Apple, then again with the carrier. The phone is supposed to show 5g uc at the top right, which my 13 pro max shows. The iPhone 14 pro will only display LTE. In the cellular setting there are missing options for 5G functionality that are shown on the 13, not the 14 pro. A replacement esim was activated. I was told to go to a t-mobile store. The staff there did a thorough review/testing, all to no avail. The conclusion is that iOS 16/16.0.1 is the problem. From what I have read online, iOS 16 is laced with bugs, including 5G issues. Nobody should buy Apple cell phone with new operating systems, too many bugs that Apple has failed to detect during their useless testing.
Are they using DFW wi-fi? Turn off the wi-fi to see what happens. I can only tell you what has happened to my new iPhone 14 pro. Also the phone makers may use the same chips produced by different companies. Perhaps you wife and son are the lucky ones.
Things work fine on both Wi-Fi and cellular. Your argument that iOS 16 is the culprit is not going to hold water.
If this were the issue, the support forums would be flooded with the same issues. They are not. I spent 5 minutes on a search of this forum and cannot come up with the same issue that you are reporting. If you can find posts with the same issue on this forum, please post some links.

I talked to both AT&T and Apple support. Apple says it's AT&T, and AT&T says it's the phone! I did some internet search and beside some ATT&T customers, some people in Verizon posted that they have the same issue as well (on Reddit).
What did your cellular carrier say when you contacted them?
If iOS 16 were the problem, I'm wondering why the two iPhone 14s that my son and his wife have from T-Mobile work fine in the DFW area?

I'm having the same problem. I have 14 Pro on AT&T. Interestingly enough my wife has 14 Pro on the same plan, and she hasn't encountered any issue! :-/
My mother-in-law, wife and myself are all having issues. Once the signal drops down to 2 bars data is completely unusable. SMS texts and phone calls still work fine though.
