Item still not ready for pickup - still "processing" for over 24 hours after order was placed, is this normal?

Unfortunately, we have no visibility over stocking levels.
Perhaps you ordered a particularly popular option? Perhaps you ordered a rare option which needs to be built?
Apple’s order-manufacture-deliver system is quite complex; and always heavily-tasked when new devices roll out - as they did just 2-weeks ago - give it another day or two to sort-out.
Assuming that it’s for a new, high-demand item (e.g an iPhone 14 or Watch 8/Ultra) … YES.

Based on that I’d say your device should be ready to pickup at 2:30.
But further down it also says "Your order will not be available to pick up until we notify you. Please arrive close to your check-in time for the best experience."
What happens if it is still stuck at processing at 2:30pm? Do they reschedule to the next available time slot? How much time do you have available to pick up your order?

So I guess despite it saying to "Check in at the Apple Store Today between 2:30 p.m. and 2:45 p.m.", I still need to wait for the second email to come?
