Can people in Find My see my location if my Apple Watch Series 8 doesn't have access to WiFi or data?

I want to take my Apple Watch Series 8 (GPS) surfing, and I won't have my phone on me. I want my wife to see my location. Does my Apple Watch work like an AirTag where she could see my location despite not being connected to my data plan or WiFi?

No. Your GPS-only watch requires wi-fi, cellular or being near your iPhone to report its location.
