You can download macOS Big Sur, but you might not be able to actually downgrade. That is wholly dependent on the model and year of your Mac.
If your Mac is a 2020 MacBook Air with the M1 chip, as your username and post info suggests, you can downgrade it to macOS Big Sur. However, doing so will erase all data on your Mac, and you'll need to manually restore your data from a backup.
IMPORTANT: Back up your Mac BEFORE downgrading it to macOS Big Sur. Time Machine can help with this.
Before I post the steps to downgrade, do you have a second Mac that is running macOS Catalina 10.15.6 or later? This info determines how the downgrade should be done.
