I have an iPhone 6 plus with ios 12.5.6. Some apps are not working fine. They open for few seconds and then close. But if you check they are still open at the second plan and if you try to open them, they close again. There is more than 30GB of space available. Ive restarted the iPhone several times without sucesss. I deleted and installed again the apps without success.

Try a forced restart.
• Press and quickly release the volume up button
• Press and quickly release the volume down button
• Press and hold the side button.
• When the Apple logo appears, release the button.

Here's how to force restart an iPhone 6:
Press and hold the Home button and the Lock button simultaneously. Keep holding both as the "Swipe to turn off" message comes and goes. Wait until you see the Apple logo in the center of the screen and release the two buttons. The phone will restart. Good luck.
