Unable to activate my new apple watch

I just received my new apple watch 8 to replace my old apple watch. I have unpaired my old watch, reset the new watch, ensured that it is fully charged and my iphone restarted with software version at 15.7. When I tried to pair the watch, it prompted me to update my watch and I did, it proceeded to activate my watch and thereafter it shows a screen saying that my phone is unpairing with the apple watch. I’ve restarted the watch and phone few times but it doesn’t work!
