I have EUR VISA Cards stored in my Apple Pay. It works in russia?

Unlikely. All Apple services including Apple Pay have been suspended in Russia while the invasions continues.
You can try, but it likely won't work. Be prepared to pay in cash or outside of Apple Pay at the very least.
