During those workouts, are you listening to other content from your Apple Watch or is the content on your iPhone? We ask this to determine if perhaps the switching isn’t happening as it should be. If you’re listening to content from your iPhone have you disabled the switching? Switch your AirPods to another device
On your iPhone or iPad
1. With your AirPods in your ears and connected to your iPhone or iPad, go to Settings > Bluetooth. Alternatively, you can go to Settings > [your AirPods].
2. Tap the More Info button next to your AirPods in the list of devices.
3. Tap Connect to This iPhone [or iPad].
4. Tap When Last Connected to This iPhone [or iPad].
5. To turn on this feature again, tap Automatically.
If this feature has worked in this same setup previously, let’s next have you restart both your iPhone and Apple Watch and test again.

The settings for AirPods on the Apple Watch can be found in Accessibility as seen in Accessibility audio settings on Apple Watch:
"Change AirPods settings
You can change press speed and press-and-hold duration settings for the AirPods you use with your Apple Watch. You can also turn on noise cancellation on AirPods Pro for when you have one of your AirPods in only one ear.
You can also open the Apple Watch app on your iPhone, tap My Watch, then go to Accessibility > AirPods."

Thank you, yes I was listening content from iPhone podcast during workouts. I have followed the steps above and also made reset my watch, reset my AirPod by forget device and reconnected later after restarting iPhone and watch. Now when I am listening from iPhone the music switched between AirPod and iPhone automatically with AirPods were on and off from the ears, works perfectly fine. Also when playing podcasts from Apple Watch directly it’s prompting to connect device and after manually selecting AirPods audio turns on automatically based Airpods on and off from the ears until playing directly from watch. However When I switched back to content from iPhone AirPods connected automatically again and then coming back, playing directly from Apple Watch, Airpods are not connecting automatically and prompting to connect device manually again. Is there any settings to connect AirPods automatically when playing from Apple Watch like iPhone settings, it’s very annoying and frustrating to access settings on Apple Watch select Bluetooth and connect Airpods prior manually prior to every workouts or listening from Apple Watch itself.
