Do you mean this Latin text, copied from the Essay template?
The title (Geology 101 Report) is in English.
The rest is in Latin
The part starting "Lorem ipsum…" is a widely used 'placeholder text' sample used to fill a space assigned to text in the document, and to display the text pattern without distracting the viewer into reading the message instead of evaluating the layout and style of the text and other elements of the page.
Clicking anywhere in a block of placeholder text in one of these templates selects ALL the text in that block. Typing anything in the block immediately deletes all of the placeholder text and begins entering it with the text being typed.
