2 iPhones, 2 Apple watches, 1 Apple id

My wife and I have always shared an Apple ID. I've had a watch for years and she just got hers. However, her activity and my activity are combined.

What can we do to fix this, but not lose all of the other sharing we have?

you can't really, in all things apple one is the appleID so you are the same person, best way is to make her her own appleID and use family sharing to accomplish well family sharing stuff.
