On a Mac you can unsubscribe from US Holidays but that means you unsubscribe from them all, not just this one. On an iPhone you can delete this event as well as all future events.
You may be able to find a third party US Holidays calendar subscription that only includes traditional holidays.
I don't have Monterey to verify, but Create Your Own Holiday Calendar From A Subscribed Holiday Calendar, worked in previous versions.
