I have to take my watch off for work. For the watch have to be on the wrist or can it be used on upper arm or ankle for contact with the skin? Can it be used in a pocket for activity monitoring etc.

It won't work if its not strapped to you and more specifically, Apple says in the link I provided, the sensors will only work if the watch sits on your wrist. So no, you really can't strap it to your ankle or upper arm. You need to strap it to your wrist.
