Does anyone know if we could use the "caption" or "label" of an object in Pages to create list of the objects (either figures in the document or tables in a document) just like a a Table of content but only for figures or tables in the document?

No. Because the Table of Contents generator works on paragraph styles and not on anything else. An image caption, by example, is not a paragraph style, but rather an object caption.

I tried to add a text box and used a paragraph style for the text n the box, but to no avail.
