On clicking the template to create the base of your Numbers document, did you immediately:
Auto save does not begin until you have saved the document.
After that, your Mac will save current states at regular (and short) intervals.

I very rarely hit File > Save in Numbers. In my experience that not necessary for autosave to start.
The key, I think, is not to save manually but rather to rename a document from the default 'Unititled' to something more meaningful.
After a new document is renamed, on my machine autosave starts automatically. There's really no need for a reminder in the app.

In this case, it was the Wife who had the issue. I came up with the same probable solutions.
It's possible that she didn't save after starting an extensive spreadsheet. It would be good that the app reminds one to save after a period of about 10 to 15 minutes of starting to prevent that.

Click on the Numbers menu, then choose Provide Numbers Feedback to get a form on which to make a Feature Request.
That way your message goes straight to Apple.
Here, your audience is people who use Numbers, and your reply will most likely come from one or more of those fellow users.
Apple provides the space for these discussions, but does not actively participate in them. Thanks SG. That's likely true. As I was saying, if there is a condition where one is working and the "autosave" function is not engaged after ten minutes then a popup reminder would be a good feature to prevent someone who is deep in data entry, late at night and not paying attention to their plight.
That Apple has to be hardwired to pay attention to useful feature requests is also annoying. There should be dropdown here to alert them about interesting feature requests that could also be voted upon within the topic.
But I'm not going to mention that elsewhere, I'm also busy on ten other projects.
