You should be able to subscribe to Apple One the following ways:

• Spotlight Search
• Settings > Name > Subscriptions
• Apple One - Apple

I would try the link via apple.com referenced above. That should be able to direct you to sign up for the Apple One trial.

What do you mean by that exactly? Apple One is not its own app or service, it is all of the other Apple Services Subscriptions bundled together. Even with the bundle, you would still launch each individual app to access the services and/or features.
