If you are using the Verizon's free 6 months Apple Music, then yes, it will be cancelled and all Music downloaded from the subscription service will be deleted.
If you are using your own paid Apple Music or Verizon's 6 months free have been completed and are now actually paying for Apple Music, then no, nothing will happen and the Music should continue to be available.

Check your Apple account charges, and your Verizon plan and see where its getting aid exactly: Link-> If you want to find or cancel a subscription from Apple - Apple Support
If its tied to your Apple ID, then you're paying for it directly. If its charged through your Verizon plan then when you cancel Verizon it will cancel the subscription.

Depending on your Verizion plan and when you got the promotion, it may be ongoing. You can check it by logging into your Verizon account either in the app or online. My Verizon plan has paid for my music for quite a few years. There was a process to move my existing Music account to Verizon and I didn't lose anything. I imagine there is a process to move the account back to your control but you should consult with Verizon on what that is before canceling your Verizon service.
