when I attempt the awkward and unergonomic manoeuvre of double clicking the right button on my 11 max to authorise a payment with Apple Pay, 9 times out of 10 the only result is a locked screen. Surely there's another less cumbersome way to do this?

I think you may not be double-clicking fast enough, default is two rapid clicks if the interval between clicks is too long you will get just a Lock Screen.
You can try double-clicking faster, if you are still having trouble you can perhaps go to settings/accessibility/side button and try another click speed, choices are "Default", "Slow", and "Slowest"
