I am currently based in Netherlands. If I move to UK and I replace my SIM with UK card will my iPhone retain all its functionality and am I able to switch back to my Netherland SIM as required in future?

If its unlocked as explained in the support document you posted from, then yes. The iPhone will retain all functionality and operate the same as it has in the Netherlands and will do so again when you return.
