Wifi automatically enables on iPhone

I don't know why you are disabling it, but if you are doing so using Control Center it tells you it will be turned on the next day. If you go to Settings > WiFi to disable it then it will not come back on.

Yes, that is what I meant when I said Control Center. If you turn it off there it will turn back on in the morning.
