Data transfer should be done during the setup of the new iPhone.

If it's already been setup, you will need to restore it and set it up again and transfer the data during the setup.

Link-> Restore your iPhone, iPad, or iPod to factory settings - Apple Support

then:

link-> Set up your iPhone or iPad - Apple Support

Data transfer should be done during the setup of the new iPhone.

If it's already been setup, you will need to restore it and set it up again and transfer the data during the setup.
